Ingredients
- 16 oz.
Gruyère, grated and at room temperature (about 4 cups)
- 1 1/2 tbsp.
cornstarch
- 1 1/3 c.
fresh apple cider
- 1 tbsp.
apple cider vinegar
Freshly ground black pepper
Pinch freshly ground nutmeg
Sliced apples, sliced pears, and sliced baguette, for dipping
Directions
- Step 1Stir together Gruyère and cornstarch in a bowl. Combine apple cider and vinegar in a medium saucepan. Bring to a boil then reduce to a simmer. Whisk cheese mixture into cider, by the handful, until smooth and blended. Whisk in pepper and nutmeg. Serve immediately with apples, pears, and baguette for dipping.
Tip: Room temperature cheese melts easier and prevents the fondue from clumping.
